This is sort of a cross between a cookie and candy.

Saltine crackers
1 small bag good chocolate chips
1 small bag peanut butter chips
1 cup butter (2 sticks)
1 cup packed brown sugar

Preheat oven to 400 degrees.

Line a jelly roll pan with foil, and spray the foil with nonstick spray (do NOT skip this step).

Place crackers, salt side up, in a single layer on the pan, tiled so there’s no space between them. If possible, make foil “bumpers” if there is space left over in pan, so crackers can’t move around.

In a saucepan, boil butter and sugar for 2 to 3 minutes, stirring constantly. Remove from heat and pour caramel mixture over crackers. Put pan in oven and bake for 4 to 6 minutes. Remove from oven, and distribute chocolate and peanut butter across crackers. After chocolate has melted a little, use heatproof spatula to smooth out surface.

Let cool completely, and then break along cracker edges.

You can also use all chocolate with these, or a mixture of chocolate and butterscotch chips, or toffee, or whatever.
